Forget the summer solstice — the real first day of summer is when you start eating watermelon. The sweet, juicy fruit is all the more refreshing when temperatures peak, making it a staple at pool parties, barbecues, and warm summer nights. While there's nothing that can truly compare to the experience of eating it by the slice as the juices drip down your fingers, watermelon in the form of a cocktail comes pretty close.

Watermelon is the perfect substitute for sugar in a mojito, and it also pairs naturally with lime and mint. To make a watermelon mojito, just add the watermelon, mint, and lime to a glass and top with ice, white rum, and seltzer. Just wait until you try it — you'll probably end up drinking it all summer long.

Notes

Opt for watermelon or lime seltzer if you want to add another layer of flavor

Ingredients

3 watermelon slices (about 1/4 cup)
5 fresh mint leaves
1/2 lime
1 1/2-2 ounces white rum
1/2 cup seltzer

Directions

Dice the watermelon and add to a glass, along with mint and lime. For a more intense flavor, use a muddler to crush the ingredients together. Top with ice and white rum, then finish with seltzer. Garnish with a watermelon slice, and enjoy!
